Baked Delicata Squash with Lemon tahini sauce

This a crazy easy way to create a delicious dish with the nutrient dense delicata squash!
Ingredients:
1-2 delicata squash, washed well
2 tsp avocado oil
pinch salt & pepper
1 tablespoon of freshly chopped herbs - thyme, sage, chives (optional)
Sauce (makes enough for about 2 squash):
2 tablespoons tahini
1-2 tablespoons of lemon juice
1/2 tsp salt
2-3 tablespoons of water
Set your oven to 400F. Wash your squash well. If its organic you can eat the skin!! Cut your squash in half lengthways. Remove the seeds with a spoon. Drizzle avocado oil over the orange flesh of the squash and spread around with a brush if you have one. Sprinkle salt & pepper over the flesh. Place skin side up on a baking sheet. Bake for 20-30 minutes. Check at 20 mins with a fork for softens of flesh. Fork should easily go through when done.
While the squash is baking, chop fresh herbs and set aside.
Sauce:
In a bowl or measuring jug, add tahini and lemon juice. Mix with a fork until well combined. Add salt and 2 tsp of water. Mix until creamy. Add more water if mixture is a bit thick for pouring as a sauce.
When squash is done, removed from oven. Turn squash over and sprinkle with herbs and drizzle with sauce. Voila!
Enjoy as a perfect side dish to many meals : )
